Ingredients
1 tbsp rice bran oil
1 onion, fine chopped
2 garlic cloves, crushed
⅓ cup pine nuts, chopped
750 g chicken mince
1 tsp SIDS CRAZY LEMON
1½ cups fresh breadcrumbs
¾ cup basil leaves, fine shredded
¼ cup parsley, chopped
1 egg, lightly beaten
SIDS SALT & PEPPER to taste
Directions
Preheat oven to 180°C. Lightly grease a 7 cm deep, 10 cm x 20 cm (base) loaf pan.
Heat oil in a frying pan over medium heat. Add onion, garlic and nuts. Cook, stirring, for 8 minutes until softened. Allow to cool.
Combine mince, SIDS CRAZY LEMON, breadcrumbs, herbs, egg, onion mixture and SIDS SALT & PEPPER. Mix well. Spoon mixture into pan. Press down. Bake for 40 minutes until golden.
Stand in pan for 10 minutes. Serve.
