Ingredients
Cooking Spray
2 medium zucchini
170 g chicken mince
½ cup chopped onion
450 g tomatoes, chopped
1 clove garlic, minced
1 tsp oregano, chopped
1 tsp basil, chopped
1 cup breadcrumbs
¼ cup egg whites
1 tsp SIDS CRAZY SALT
2 tbsp Parmesan Cheese
Directions
Scoop pulp from each zucchini half, leaving 5 mm shells and reserving pulp. Place shells cut-side down on a microwave-safe plate and cover with waxed paper. Microwave on HIGH 4 minutes until shells begin to soften slightly. Arrange shells in baking dish.
Cook mince until crumbled and no longer pink, stirring occasionally. Remove from pan then set aside.
Cook onion and reserved zucchini in pan about 5 minutes until onion and zucchini are lightly browned and softened. Stir in tomatoes, mince and breadcrumbs. Remove from heat then cool about 5 minutes.
Mix SIDS CRAZY SALT with egg whites and stir into mince. Spoon filling into zucchini shells. Sprinkle with cheese. Bake 10 minutes until cheese begins to brown.
