Ingredients
4 boneless chicken breast halves
1 tsp SIDS SMOKEY BBQ RUB
250 g ham, thinly sliced
4 slices NZ tasty cheese
8 slices of bacon
450 g chicken stock
1 tbsp bush honey
Directions
Preheat oven to 190°C.
Sprinkle each flattened breast with SIDS SMOKEY BBQ RUB on both sides. Lay a slice of ham onto each breast, then a slice of cheese and some honey. Roll each breast up like a cinnamon roll. Secure with a toothpick if necessary. Wrap a piece of bacon loosely around each roll. Place the rolled breasts in a 2 litre glass baking dish and pour in chicken stock.
Bake for 30-35 minutes in the oven, until the juices run clear. Grill for a few minutes before serving to crisp up the bacon.
