Rhubarb and chicken make a perfect match and a very tasty spring dish when rhubarb is in season.

Ingredients

1 chicken, cut in 8 pieces
1 tsp SIDS CRAZY SALT
300 g rhubarb
50 g raw sugar
1 cucumber, deseeded & sliced
1 bunch of radishes, sliced
100 ml plain yoghurt
1 garlic clove, finely chopped
2 tbsp chopped mint
SIDS SALT & PEPPER to taste

Directions

Preheat the oven to 200ºC. Put the chicken pieces in an ovenproof dish, sprinkle with SIDS CRAZY SALT and roast in the oven for 30 minutes.
Cut the rhubarb into pieces and mix it with the sugar in a bowl.
Take the chicken out of the oven, place the rhubarb under the chicken, put it back in the oven and roast for 15 minutes more.
To make the salad mix the cucumber and radish slices in a bowl. Blend together the dressing ingredients and mix this into the salad. Season with SIDS SALT & PEPPER to taste. Serve the chicken and rhubarb with the salad and boiled potatoes.
