Ingredients

2 tbsp rice bran oil plus extra
1 garlic clove, minced
4 chicken breasts
Pita bread to serve
SPICE RUB:--
2 tsp coriander, ground
3 tsp cumin, ground
1 tsp mace, ground
1 tsp ginger, ground
2 tsp cayenne pepper
2 tsp SIDS SALT & PEPPER
2 tsp SIDS CRAZY LEMON
SALSA:--
1 red onion, diced
1 ripe mango, diced
1 orange capsicum, diced
1 avocado, diced
20 coriander leaves, shredded
10 mint leaves, shredded
2 tbsp rice bran oil
1 tsp SIDS RASPBERRY VINEGAR
Juice of ½ a lime

Directions

Spice Rub: Mix all the ingredients together including SIDS SALT & PEPPER and SIDS CRAZY LEMON.
Marinade: Mix together spice rub, oil and garlic then mix to a paste and set aside for 15 minutes. (or overnight) Make 5 diagonal cuts in the chicken pieces about 4 mm deep. Rub in the marinade and allow to infuse for about 10 minutes.
Fry the chicken in a medium pan on both sides until cooked through. Put on a plate to rest.
Salsa:-- Mix all the salsa ingredients together carefully, including SIDS RASPBERRY VINEGAR, ensuring you don't crush the mango or avocado.
Place chicken on a serving dish, top with salsa and serve with pita bread.
