Ingredients
2 tbsp rice bran oil
Zest & juice of 1 orange
2 tbsp bush honey
1 tbsp rosemary, chopped
4 Waitoa chicken breast fillets, no skin
PEACH SAUCE:--
410 g NZ peaches
1 spring onion, fine chopped
2 tsp fresh ginger, grated
Dash of tabasco sauce
1 tbsp SIDS LOW SUGAR RASPBERRY VINEGAR
Directions
Mix oil, orange, honey and rosemary and pour over chicken to marinate for 1 hour or overnight in the fridge.
In a pan, cook chicken over a moderate heat 4-5 minutes each side, baste with marinade often, until cooked. Alternatively, grill or BBQ chicken on HIGH heat for 5-6 minutes, baste with marinade often.
PEACH SAUCE: Blitz together peaches, (including the syrup) spring onion, ginger, tabasco and SIDS LOW SUGAR RASPBERRY VINEGAR until smooth.
