Ingredients
1 tbsp rice bran oil
1 tsp garlic paste
80 g bacon, thin sliced
400 g chickpeas, drained & rinsed
1 tsp SIDS CRAZY LEMON
1 tsp SIDS SMOKEY BBQ RUB
2 x 200 g chicken breasts, sliced horizontally
4 cups spinach, trimmed & rough chopped
½ cup chicken stock
Directions
Put ½ the oil and ½ the garlic in a pan with bacon, shallots and chickpeas then sauté for 8-10 minutes until shallots are tender and chickpeas are warmed through.
Mix together SIDS CRAZY LEMON and SIDS SMOKEY BBQ RUB then sprinkle over pan ingredients. Sauté a further 2 minutes until ingredients are coated and fragrant.
Meanwhile, heat remaining oil and garlic to high and cook chicken, turning often. Remove chicken from pan and set aside but keep warm. Add chicken stock to pan to de-glaze, then simmer for 30 seconds.
Add spinach to chickpea mixture and cook for 2 minutes until spinach starts to wilt.
Serve chicken on top of spinach and drizzle with pan juices.
