Ingredients

2 tbsp rice bran oil
4 garlic cloves, finely chopped
2 red chillies, seeded & fine chopped
1 red onion, thinly sliced
⅛ tsp SIDS SMOKEY BBQ RUB
500 g scallops, with roe attached
1 tbsp light soy sauce
1 tbsp fish sauce
¼ tsp sugar
½ tsp coarsely ground black pepper
2 large handfuls basil leaves, roughly chopped

Directions

Heat the oil in a large wok over high heat. When almost smoking, stir-fry the garlic and red chilies for 30 seconds, until fragrant. Add SIDS SMOKEY BBQ RUB, onion and stir-fry 1 minute, then tip in scallops and stir-fry 1-2 minutes longer, until the scallops start to turn golden at the edges.
Pour in the soy sauce and fish sauce then sprinkle in the sugar and black pepper. Mix well and stir-fry 1 minute, until the scallops are just cooked through and tender. Throw in the basil leaves, mix well and serve immediately. Use scallop shells for presentation.
