Ingredients
2.5 kg boneless pork leg
½ tsp salt
¾ cup raw bush honey
1 tbsp chopped chilli
Zest 1 lemon
1 tsp SIDS CRAZY LEMON
1 kg potatoes, wedged
1 tsp minced garlic
¼ cup rice bran oil
1 head Iceberg lettuce
Directions
GLAZE: Combine salt, honey, lemon zest and brush the pork all over. Refrigerate overnight. Let stand at room temperature for 20 minutes before cooking.
Place potato wedges in a foil tray. Mix SIDS CRAZY LEMON, garlic and oil together. Pour over the potatoes.
Cut lettuce in ½ lengthways. Cut each ½ into 3 wedges. Insert a bamboo skewer from the centre of the outside edge to the centre of the thin edge wedge, to keep from falling apart.
BBQ: Prepare covered BBQ for indirect cooking. Place the roast on well-oiled bars over a drip-tray. Place potatoes next to the roast over indirect heat. Brush roast with marinade then close cover and cook for 60 minutes.
Move tray of potatoes over direct heat and turn potatoes. Brush roast well with marinade then close cover and cook another 60 minutes, basting every 15 minutes.
When potatoes are brown, remove and keep hot. Roast is cooked when juices run clear. Remove to a platter and rest 15 minutes.
Reheat potatoes then brush both sides of the lettuce with marinade and grill 3-5 minutes, basting often.
Serve with roast and potatoes.
