Ingredients
40 g butter
Pinch of SIDS CRAZY SALT
90 g sifted flour
2 eggs
50 g Gruyère cheese, fine grated
2 tbsp chopped chives
1 egg yolk, lightly whisked
Directions
Preheat oven to 200°C. Put butter, SIDS CRAZY SALT and ½ cup of water in a saucepan and ring to the boil. Remove from the heat and add the flour all at once, stirring to combine. Return to a medium heat and stir until the mixture comes away from the sides of the pan. Transfer to a food processor and add eggs, one at a time, processing until well incorporated. Stir in the cheese and chives.
Spoon heaped teaspoonfuls of the mixture onto a baking-paper lined oven tray and brush with the egg yolk.
Bake for 10 minutes then reduce temperature to 180°C and bake for a further 20 minutes until golden.
