Ingredients
2 kg boneless pork loin roast
½ tsp ground cloves
1 apple, sliced
1 kg cranberry sauce
480 g chicken stock
1 tbsp American Mustard
1 tbsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground ginger
Pinch of SIDS CRAZY LEMON
1 orange, zested
Directions
Preheat oven to 200°C.
Place pork roast into a roasting pan and cover with American Mustard. Cover the roast with apple slices.
Mash cranberry sauce in a bowl with a potato masher then stir chicken stock, cinnamon, nutmeg and ginger into cranberries. Pour about half the cranberry mixture over the pork roast. Cover with a lid or a sheet of aluminium foil.
Bake in the oven for 30 minutes then pour remaining cranberry mixture and SIDS CRAZY LEMON over roast. Sprinkle orange zest over the cranberry sauce then return to oven and roast until cranberry mixture forms a glaze and an instant-read meat thermometer inserted into the centre of the meat reads at least 65°C, about 30 more minutes.
