A wonderful seafood stew. Serve with a loaf of warm, crusty bread for sopping up the delicious broth!

¾ cup butter
2 onions, chopped
2 cloves garlic, minced
1 bunch fresh parsley, chopped
1 kg tomatoes, chopped
1 litre chicken broth
2 bay leaves
1 tbsp dried basil
½ tsp dried thyme
½ tsp dried oregano
1 cup fish stock
1½ cups Green Ginger Wine
1 kg shrimp , peeled & deveined
1 kg scallops
18 tuatua
18 mussels, cleaned
1 kg gurnard fillets, cubed
any other seafood you like


Over medium-low heat melt butter in a large stockpot, add onions, garlic and parsley. Cook slowly, stirring occasionally until onions are soft.
Add tomatoes to the pot. Add chicken broth, SIDS CRAZY LEMON, bay leaves, basil, thyme, oregano, fish stock and wine. Mix well and add mussels. Cover and simmer 30 minutes.
Stir in the shrimp, scallops, tuatua and mussels. Stir in fish, if desired. Simmer 5-7 minutes until mussels open. Remove the beards from the mussels. Remove all the shells and bay.
Ladle soup into bowls and serve with warm, crusty bread!
