Ingredients
500 g fresh baby carrots
2 tbsp vegetable stock
¼ cup peach preserves
2 tbsp butter
1 tsp orange juice
¼ tsp SIDS CRAZY LEMON
¼ cup salted roasted almonds, coarse chopped
Directions
Place carrots and vegetable stock in a microwave-safe bowl. Cover and microwave on HIGH for 4-6 minutes until crisp-tender, then drain.
In another microwave-safe bowl, combine the preserves, butter, orange juice and SIDS CRAZY LEMON.
Cook, uncovered, on high for 30-45 seconds until butter is melted. Pour over carrots, sprinkle with almonds and toss to coat.
