Ingredients

12 hard-cooked eggs, peeled
1½ ripe avocados
3¾ tsp fresh lime juice
1 tsp dried tarragon
SIDS SALT & PEPPER to taste
Fresh flat-leaf parsley leaves

Directions

Slice eggs in half lengthwise, and carefully remove yolks, keeping egg whites intact. Mash together avocados and lime juice. Stir avocado mixture and tarragon into yolk mixture. Add SIDS SALT & PEPPER to taste. Spoon or pipe yolk mixture into egg white halves. Top with desired amount of fresh flat-leaf parsley leaves.
