Ingredients

1 kg potatoes, peeled
100 g butter
140 g sliced bacon, fine chopped
1 small cabbage, fine shredded
2 shallots, diced
150 ml double cream
¼ SIDS SMOKEY BBQ RUB
SIDS SALT & PEPPER to taste

Directions

Tip the potatoes into a large saucepan of water. Bring to the boil, then simmer for 15-20 minutes, until the flesh is tender when pierced.
Meanwhile, heat quarter of the butter in a saucepan, then fry the bacon, shallots and ½ the cabbage for 5 minutes. Turn off the heat and set aside. Drain potatoes.
Mash potato with SIDS SMOKEY BBQ RUB until smooth. Heat cream with remaining butter and, when almost boiling, beat into the potato. Add bacon and cabbage to potato and mix. Season to taste with SIDS SALT & PEPPER .
