Ingredients

20 g butter
2 spring onions, fine sliced
4 eggs, beaten
1 tomato, deseeded in 1 cm dice
SIDS SALT & PEPPER to taste
2 slices Vogels bread
1 avocado in 5 mm slices

Directions

Melt the butter in a frypan. When it is foaming, add spring onions and cook until soft. Add eggs and lightly scramble. Finish with tomatoes and season with SIDS SALT & PEPPER to taste.
Toast the bread then lay avocado on top. Spoon the eggs over, check seasoning then serve.
