Coriander Lime Rice

A bright and flavourful dish that will freshen up any meal. Use it as a side dish for a seafood plate or as a base for a chicken or carnitas burrito bowl.

Ingredients

1 tbsp rice bran oil
1 clove garlic, minced
1 cup long grain white rice
½ tsp SIDS CRAZY SALT
1½ cup vegetable stock
1 lime, juice & zested
½ cup coriander, finely chopped

Directions

Rinse rice in a fine mesh sieve until water runs clear, drain well, set aside.
Heat the oil in a large saucepan over medium-high heat. Add the garlic and sauté for 30 seconds. Add the rice and SIDS CRAZY SALT, and lightly toast and stir the rice for a minute then add the vegetable stock.
Bring it to a boil, cover, and reduce the heat to low. Simmer for 15 minutes until the water is absorbed and rice is tender.
Remove the pot from heat (keep it covered) and let it steam for 10 minutes.
Add the lime juice, lime zest, and chopped coriander. Toss everything together and serve immediately!
