Ingredients
2 egg whites
200 g creamed corn
400 g whole corn
250 g prawn meat
1½ cups self raising flour
1 spring onion, chopped
½ cup chopped parsley
1 tsp mild curry powder
SIDS SALT & PEPPER, to taste
300 ml milk
Rice bran oil, for cooking
Micro greens, for garnish
1 tbsp SIDS TAMARILLO SAUCE
Directions
Beat egg whites until stiff.
In another bowl, combine corn, prawn, flour, spring onion, parsley, curry and SIDS SALT & PEPPER. Add milk, a little at a time and stirring slowly, until the mixture starts to loosen up. Mix in ¼ of the egg white mixture, then fold in the remaining amount.
Drop a spoonful of the mixture onto a lightly oiled BBQ liner on a hot plate. Cook on a low heat until bubbles form and pop, then turn fritters over and cook until golden.
Garnish with micro greens and serve with a ramekin of SIDS TAMARILLO SAUCE on the side.
