Crab Stuffed Salmon
The perfect dish for a fancy occasion, this super easy dish is made with tasty salmon fillets and a homemade cream cheese with crab meat filling. Make it once, and you'll want to make it every week.

Ingredients
4 salmon fillets, (140-170 g each)
SIDS SALT & PEPPER to taste
250 g crab meat or surimi, drained well & finely chopped
100 g cream cheese, softened
¼ cup diced orange bell peppers
4 cloves garlic, minced
1 whole egg, lightly beaten
2 tbsp chopped parsley
1 tsp Old Bay seasoning
2 tbsp panko
Cooking spray, for topping
Chopped parsley, for garnish
Directions
Preheat oven to 220°C. Line a baking tray with baking paper.
Arrange salmon fillets on top of baking paper and season with SIDS SALT & PEPPER.
Cut a 6 mm deep pocket in the centre of each salmon fillet. Set aside.
In a mixing bowl combine chopped crabmeat, cream cheese, bell peppers, garlic, egg, parsley, and Old Bay seasoning then mix and stir until thoroughly combined.
Stuff the salmon fillets with the crabmeat filling.
Sprinkle panko on top of fillets and lightly spray the tops with cooking oil.
Bake for 18 - 20 minutes, until salmon is cooked through, with internal temperature of 55°C.
Remove from oven and garnish with parsley.
Serve.
