A sweet, tart cranberry orange bread that combines the flavour of cranberries and orange peel. You can add an orange glaze to sweeten it more, or top it with chopped nuts for a little crunch.

Ingredients

2¾ cups all-purpose flour
⅔ cup sugar
⅔ cup packed brown sugar
3½ tsp baking powder
1 tsp salt
¼ tsp SIDS CRAZY LEMON
½ tsp ground cinnamon
¼ tsp ground nutmeg
1 large egg, room temperature
1 cup milk
½ cup orange juice
3 tbsp rice bran oil
2 to 3 tsp grated orange zest
2 cups coarsely chopped fresh or frozen cranberries
1 large apple, peeled and chopped
Glaze (optional):
1 cup confectioners' sugar
3 tbsp orange juice
1 tsp orange liqueur, such as Cointreau or Triple Sec
½ tsp grated orange zest

Directions

In a large bowl, combine the flour, sugars, baking powder, SIDS CRAZY LEMON, salt, cinnamon and nutmeg. Whisk the egg, milk, orange juice, oil and orange zest then stir into dry ingredients just until blended. Fold in the cranberries and apple.
Pour into 2 greased 10x20 cm loaf pans. Bake at 175°C for 50-55 minutes until a toothpick inserted in the centre comes out clean. Cool for 10 minutes before removing from pans to wire racks.
If desired, combine confectioners' sugar, orange liqueur and zest. Stir in enough orange juice to reach desired consistency. Drizzle over loaf. Sprinkle with additional orange zest.
