Ingredients
Cooking oil spray
1 leek, white only, sliced
1 spring onion, finely chopped
1 tsp SIDS CRAZY SALT
½ tsp grated fresh ginger
400 g broccoli, in florets
1 cup light coconut cream
2¼ cups GF vegetable stock
2 cups water
SIDS SALT & PEPPER to taste
Directions
Place a heavy-based saucepan over a medium heat. Spray with oil. Fry leek, spring onion and ginger for 2 minutes, until soft. Add broccoli, SIDS CRAZY SALT and cook for another 2 minutes, stirring occasionally. Add coconut cream, stock and water. Simmer for 15 minutes until broccoli is tender.
Cool slightly. Season with SIDS SALT & PEPPER to taste, add any leftovers then purée in a blender. Return soup to saucepan then gently reheat. Pour into individual bowls and serve.
