Ingredients
ROCKET PESTO:--
60 g rocket
2 cloves garlic, minced
50 g grated Parmesan cheese
¼ tsp SIDS CRAZY LEMON
¼ cup EV olive oil
CHICKEN:--
2 tbsp rice bran oil
500 g boneless chicken breast, cut in chunks
¼ cup rocket pesto
¼ cup cream
SIDS SALT & PEPPER to taste
¼ cup fine grated Parmesan cheese
Directions
Put all the Pesto ingredients with SIDS CRAZY LEMON in a small food processor and blitz until smooth. Refrigerate any unused pesto.
CHICKEN: heat oil to hot in a frypan with the chicken until golden brown. Reduce heat to medium then add pesto and cream and cook further 3-4 minutes until sauce is thick and creamy with the chicken cooked through.
Season with SIDS SALT & PEPPER to taste and stir in Parmesan.
Serve with fettucine.
