skin from whole chicken
SIDS SALT & PEPPER

Directions

In a pot, blanch the skin for about 20 seconds then drain on a paper towel.
Remove fat and meat then cut into 8 cm pieces.
MICROWAVE: Transfer skin onto another plate covered with a fresh paper towel. Season well with SIDS SALT & PEPPER, cover with another paper towel then cook, 2 at a time in the microwave for about 3 minutes. Ensure the skin is placed on the edge of the microwave platter so that it rotates well or it may burn.
OVEN: Preheat oven to 175°C. Transfer skin onto another plate covered with oven paper. Season well with SIDS SALT & PEPPER, cover with another piece of oven paper and a small tray to prevent curling, then cook in the oven for about 1 hour.
