Cuban Mojo Marinated Pork (Lechosado)
A traditional Cuban roasted pork recipe that is very simple, yet packed with tons of flavour! There is nothing to this pork except amazing marinade. Just look at that crust!

Ingredients
¾ cup rice bran oil
1 tbsp orange zest
¾ cup fresh orange juice
1 tsp SIDS CRAZY LEMON
½ cup fresh lime juice
1 cup coriander, fine chopped
¼ cup mint leaves, fine chopped
8 garlic cloves, smashed
1 tbsp minced oregano (2 tsp dried)
2 tsp ground cumin
SIDS SALT & PEPPER to taste
2 kg boneless pork shoulder, in one piece
Directions
Add the orange juice, coriander leaves, SIDS CRAZY LEMON, mint leaves, smashed garlic cloves then pulse until finely chopped. Add this mixture to a ziplock bag, along with the rest of the oil, zest, lime juice, oregano and cumin.
Place the zipped up bag in a baking dish and put it in the fridge overnight.
Preheat oven to 220°C. Place an oven wire rack over a rimmed baking tray. Place the pork on the rack and discard the marinade. Add SIDS SALT & PEPPER to taste.
Roast the pork for 30 minutes until lightly browned. Turn the oven down to 190°C and roast for another 1 hour and 20-30 minutes, until a meat thermometer reads 70°C.
Transfer to a cutting board, cover with aluminum foil to rest at least 20 minutes.
Carve against the grain and serve.
