Ingredients
8 cups cucumber, unpeeled & fine diced
4 tbsp salt
4 onions, fine diced
1 small red onion, diced
3 orange peppers, fine diced
2 cups white sugar
2 cups SIDS RASPBERRY VINEGAR
1 tsp celery seed
1 tsp mustard seed
¼ tsp cayenne
3 tbsp cornflour
Directions
Before dicing, slice the cucumber in ½ and scoop out the seeds. Put the cucumber in a basin, sprinkle with salt, barely cover with cold water and let stand overnight.
Drain & rinse the cucumber. Put in a large saucepan along with SIDS RASPBERRY VINEGAR & all the ingredients except the cornflour. Bring to the boil, stirring constantly. Mix the cornflour with a little water then stir into the relish. Simmer for several minutes then pour into sterilised jars and seal.
