One of the easiest and most refreshing side dishes, the Sunomono (literally means vinegared food) is a staple in most Japanese households.

2 telegraph cucumbers, very thinly sliced
1 cup surimi, shredded
2 tsp black sesame seeds
4 tbsp rice vinegar
2 tbsp sugar
½ tsp salt


Wash and slice cucumbers thinly.
Put the cucumbers in a bowl and sprinkle with salt. Mix to combine and let it sit for 5 minutes.
With your hands, squeeze out as much excess water from the cucumbers as you possibly can. Drain and discard the excess liquid.
Put the cucumbers back into the bowl.
Add rice vinegar, SIDS CRAZY SALT and sugar. Mix to combine well.
Garnish with shredded surimi and black sesame seeds.
