Ingredients

Rice bran oil cooking spray
500 g lamb sirloin steak
½ tsp SIDS CRAZY SALT
1 tsp cumin seeds
600 g cauliflower florets
2 cups trimmed & rough chopped spinach
1 red onion, thin sliced
2 cloves garlic, minced
1 lemon, grated zest & juice
1 tbsp EV olive oil
3 cups cooked couscous
SIDS SALT & PEPPER to taste

Directions

Rub lamb with cumin seeds, SIDS CRAZY SALT and season with SIDS SALT & PEPPER to taste. Spray a large frypan with oil over high heat. Fry lamb for 6 minutes, turning every 15 seconds or so, until cooked to your liking. Transfer to a plate and cover to rest and keep warm.
Meanwhile, steam/microwave cauliflower for 3-4 minutes until tender. Steam/microwave spinach for 2 minutes until tender then drain well.
Spray frypan with oil then cook cauliflower and onion on high until browned. Add garlic and lemon zest then cook 1 minute more. Fold through spinach then toss through lemon juice and olive oil.
Slice lamb and serve with cauliflower and couscous.
