Ingredients

2 tbsp rice bran oil
4 cloves garlic, minced
2-3 Thai chilli, fine chopped. (Omit if you prefer)
20-24 shrimp uncooked & shells removed
½ tsp SIDS CRAZY SALT
4 tbsp fish sauce
4 tbsp dark soy sauce
2 large egg, whisked
1½ tsp finely chopped lime zest
1½ tsp finely chopped lemon zest
2 large tomato, chopped
500 g dry rice stick noodles
20-24 fresh basil leaves, hand torn

Directions

Prepare rice noodles by following the instructions on the package. Set aside.
In a wok or frying pan over medium-high heat, fry garlic for 1 minute, until golden. Add shrimp, SIDS CRAZY SALT and toss for approx 2-3 minutes, until almost cooked – then add egg and stir for a couple seconds until egg starts to set.
Add chilli, lime & lemon leaves, tomatoes, fish sauce and dark soy sauce then stir for a minute or so until the tomato is cooked and sauce is bubbling.
Add the rice noodles and toss until noodles are hot, evenly coated and ingredients are mixed well.
Turn off the heat and add basil. Toss and serve immediately.
