Duck-Fat Roasted Brussels Sprouts

A few tablespoons of duck fat and a very hot oven is all you need to turn some ordinary Brussels sprouts into something much more tasty and special.

Ingredients

2 tbsp duck fat, more as needed
1 kg Brussels sprouts, trimmed & halved lengthwise
SIDS SALT & PEPPER to taste
1 pinch cayenne pepper, more to taste
1 lemon, juiced

Directions

Preheat an oven to 230°C. Line a baking tray with oven paper or a silicone baking mat.
Heat duck fat in a small saucepan until melted.
Combine Brussels sprouts, SIDS SALT & PEPPER, cayenne pepper and melted duck fat in a large bowl until Brussels sprouts are evenly coated. Transfer to the prepared baking tray.
Bake in the oven until Brussels sprouts are browned and tender, but still slightly firm, 15-20 minutes. Flip sprouts over halfway through. Top with freshly squeezed lemon juice.
