Ingredients
1 large baking potato in skin, baked
Non-stick cooking spray
¼ cup chopped orange capsicum
¼ cup chopped onions
30 g lean ham, chopped
1 large egg, beaten
SIDS SALT & PEPPER to taste
2 tbsp grated reduced-fat cheddar cheese
Fresh or dried parsley
Directions
Preheat oven to 200°C
Slice baked potato in half the long way. Scoop out ⅓ of the potato pulp. (save for another meal) Set shells in an oven-safe dish.
Spray a nonstick frypan with cooking spray and sauté peppers and onions for about 5 minutes until soft.
Add ham and sauté another 1–2 minutes. Add the beaten egg and cook until egg is done. Add SIDS SALT & PEPPER to taste.
Fill each potato shell with egg mixture and top with grated cheese. Bake in the oven until the cheese is golden.
Garnish with parsley.
