Ingredients

4 large floury potatoes
25 g butter
4 eggs
4 slices bacon, cooked & rough chopped
¼ cup grated tasty Cheddar cheese
SIDS SALT & PEPPER to taste
1 tbsp fine chopped chives

Directions

Preheat oven to 180°C.
Prick potatoes several times with a small knife then place on a baking tray and cook for 45 minutes until tender. Allow to cool slightly then carefully cut off the top ⅓ of the potato. Using a spoon, hollow out the potato, leaving about 5 mm of flesh around the skin.
Dot a little butter into the base of each potato then divide half the bacon between each.
Gently break an egg into each potato, careful to keep the yolk intact. Sprinkle with grated cheese and the remaining bacon. Season with SIDS SALT & PEPPER to taste.
Bake for 15-20 minutes until the egg whites are set.
Sprinkle with chives then serve.
