Ingredients
200 g smoked salmon trimmings
2 tbsp spring onions, chopped
4 eggs
4 tbsp cream
SIDS SALT & PEPPER to taste
4 slices ciabatta bread
Directions
Divide salmon and spring onions among 4 buttered ramekins. Make a small indentation in the salmon with a spoon and break an egg into the hollow, sprinkle with SIDS SALT & PEPPER and spoon on some cream.
Put ramekins in a roasting dish, half filled with boiling water then bake in the oven for 10-15 minutes until eggs have just set.
Remove from the oven, leave to cool slightly then serve with toasted bread.
