Ingredients
200 g rocket
1½ cups cooked farro
1 cup feta
1 large apple sliced
⅓ cup cranberries
FARRO DRESSING:--
3 tbsp oil, EV olive or avocado
1 tsp Dijon mustard
¼ tsp SIDS CRAZY LEMON
1 tbsp lemon juice
½ tsp SIDS SALT & PEPPER to taste
Directions
Place the arugula on the bottom of a large bowl. Top it off with the cooked farro. Add on the apple slices, feta cheese, and cranberries.
In a small jar with a lid, combine the oil, dijon mustard, SIDS CRAZY LEMON, lemon juice, SIDS SALT & PEPPER. Seal the lid and shake to combine.
Drizzle the dressing all over the salad. Serve and enjoy.
