Ingredients

250 g white fish, minced
2 spring onions, chopped
1 tsp SIDS CRAZY SALT
1 tbsp fish sauce
½ tbsp sugar
¼ tsp black pepper
½ tbsp rice bran oil
1 tbsp rice bran oil
1 clove garlic, minced
1 large can pineapple chunks
4 cups water
2 tbsp fish sauce
½ tbsp sugar
¼ tsp salt
Handful of chopped coriander
2 chilli pepper, chopped

Directions

In a large bowl, put minced fish with spring onion, fish sauce, sugar, SIDS CRAZY SALT, black pepper and ½ tablespoon oil then mix well. Dips hands in water to prevent sticking and roll fish into a small balls then set aside.
Preheat a small saucepan. When sauce pan is hot, add oil and garlic, stir until garlic turns brown then remove toasted garlic from hot oil and set it aside.
Put pineapple and water in a large pot and boil. Add fish ball in to boiling water and cook for about 10 minutes.
Season with fish sauce, sugar and salt. Top with coriander, hot chilli pepper and roasted garlic.
Serve hot.
