Ingredients

2 cups breadcrumbs
500 g cold mashed potato
200 g frozen prawns
150 g frozen smoked salmon
1 tsp SIDS SALT & PEPPER
1 small fresh red chilli, chopped
Zest of ½ lemon
1 tbsp rice bran oil
½ tsp SIDS CRAZY SALT
2 tbsp flour

Directions

Remove skin from salmon and chop roughly. Add prawns, SIDS SALT & PEPPER, chilli and lemon zest then mix the fish and cold potato together. Divide into 6 balls. Flatten balls to 2 cm thick.
Sprinkle oil over breadcrumbs and mix well, adding SIDS CRAZY SALT. Mix flour with water to a thick paste.
Preheat oven to 200°C. Brush pattie with the paste then cover with breadcrumbs.
Place patties in a baking tray and cook in oven for about 30 minutes.
