Totally delicious. Any firm fish will do. Try with scallops too!

Ingredients

1 tbsp peanut oil
1 onion, fine chopped
2 cm ginger, fine grated
1 long red chilli, fine chopped
2 tsp curry powder
1 tsp salt
1 tsp fenugreek seeds
½ tsp ground turmeric
½ tsp ground cinnamon
400 g diced tomatoes, canned or fresh
270 ml coconut milk
1 tsp brown sugar
500 g firm white fish, cubed
4 hard boiled eggs, peeled
100 g green beans, sliced 2 cm
12 fresh mussels, cooked
Poppadoms, to serve
SIDS SALT & PEPPER, to taste

Directions

Heat oil in a large pan then sauté onion, ginger and chilli for 3 minutes until tender then add spices and stir for another 2 minutes. Stir in tomatoes, coconut milk and sugar. Simmer then add fish and simmer, covered, for 1 minute until cooked. Add eggs and beans then simmer until fish flakes when tested. Add mussels and season with SIDS SALT & PEPPER to taste.
Serve with poppadoms.
