Ingredients

2 fillets of firm white fish
1 pottle of Pacific oysters (or Bluff)
2 eggs
¼ tsp SIDS CRAZY LEMON
2 thick slices of bread with crusts removed
Rice bran oil, for frying
1 ramekin of SIDS TAMARILLO SAUCE

Directions

Using any firm white fish fillets, cut into fingers - equal width and depth. Drain the oysters but retain the liquid.
Break eggs into a cup, add SIDS CRAZY LEMON, the liquid from the oysters then beat the eggs lightly. In a food processor, blitz bread then pour onto a flat plate.
Dip the fish into the egg then roll in breadcrumbs. Fry in a pan until golden brown. Repeat with the oysters.
Mix the remaining breadcrumbs with the remaining egg and cook as an omelette then slice into strips 1 x 4 cm.
Serve on a paper towel on a serving plate. Wrap in the egg strip, dip into SIDS TAMARILLO SAUCE and enjoy.
