Ingredients
2 gurnard or like
1 tbsp onion powder
1 tsp SIDS SMOKEY BBQ RUB
Pinch dried thyme
100 ml Tui lager
2 limes, 1 sliced, 1 cut into wedges
Directions
Gut, scale and clean the fish then make a few slashes in the flesh on both sides with a sharp knife.
Mix the onion powder, SIDS SMOKEY BBQ RUB, paprika and thyme with the beer. Pour over the fish and rub into the slashes and cavity. Place the lime slices inside the bellies, cover with film and leave to marinate in the fridge for 1 hour.
Heat the grill to medium-high then place the fish an a tray and grill for 15-20 minutes, turning halfway through. Baste the fish with a little beer as it cooks.
Serve with lime wedges to squeeze.
