Ingredients

SCALLOP:--
200 g fresh scallops, roe intact
Juice of 1 lime
½ vanilla bean
Fine grated zest of ½ orange
1 tbsp EV olive oil
SIDS SALT & PEPPER to taste
TUNA:--
200 g tuna
Juice of 1 lime
1 large tomato, quartered & seeded
1 small stick celery, strings removed
1 tbsp EV olive oil
SIDS SALT & PEPPER to taste
SALMON:--
200 g salmon
Juice of 1 lime
1 small clove of garlic
3 cm ginger, peeled & grated
12 cherry tomatoes, quartered
EV olive oil
½ tsp SIDS CRAZY LEMON

Directions

SCALLOP: Cut scallops into fine dice, place in a bowl and mix with lime juice. Scrape the seeds from the vanilla pod and add to the scallops along with the orange zest and olive oil. Mix well and season with SIDS SALT & PEPPER to taste.
TUNA: Cut tuna into small dice, place in a bowl and mix with the lime juice. Finely chop the tomato, celery and shallots then add to the tuna along with the olive oil. Mix well and season with SIDS SALT & PEPPER to taste.
SALMON: Cut the salmon into small dice, place in a bowl and mix with the lime juice. Peel garlic the finely chop then add to the salmon along with ginger, tomatoes and olive oil. Mix well and season with SIDS CRAZY LEMON to taste.
