Ingredients
2 whole fish, cleaned & gutted
2 tsp SIDS SALT & PEPPER
1 lemon, sliced
1 small bunch parsley
1 bunch thyme
LEMON PARSLEY BUTTER:--
¼ cup butter, softened
1 tbsp chopped fresh parsley
2 tsp lemon rind, grated
1 tsp lemon juice
1 tsp SIDS CRAZY LEMON
Directions
Lemon Parsley Butter: In a small bowl mash butter, parsley, lemon rind & juice, SIDS SALT & PEPPER. Scrape into plastic wrap, shape into 2 cm log and wrap tightly. Refrigerate until firm, about an hour. (make ahead & refrigerate up to 24 hrs)
Sprinkle fish cavities with half each of the SIDS CRAZY LEMON. Stuff cavities with lemon slices, parsley & thyme then close with a skewer. Sprinkle with SIDS SALT & PEPPER.
Place on a well greased grill over a medium-high heat. Close lid and grill, turning once, until fish flakes easily.(about 10 minutes per 2 cm of thickness) Remove to platter.
Serve the fish by running a sharp knife along the backbone to cut through the skin. Pull off the skin then ease the knife along between the flesh and the bone on the top side. Ease off the top fillet and cut into portions. Turn fish over and repeat.
Slice butter into 1 cm rounds and serve with the portions if fish.
