Ingredients
BANANA SALSA:--
1 banana, cut in small cubes
1 bottled chipotle pepper, chopped
1 red onion, chopped
1 orange capsicum, chopped
6 mint leaves
1 tsp runny honey
Juice of 1 lime
1 tbsp orange juice
FISH:--
1 shallot, chopped
30 x 35 cm baking paper or corn husk
Gurnard or lemon fish
Sprinkle of SIDS CRAZY LEMON
Chives, chopped
Squeeze of lemon juice
Knob of butter
Directions
BANANA SALSA: Using all the Salsa ingredients, mix well but gently in a bowl.
FISH: Place fish in some baking paper or corn husk. Sprinkle in some shallots then place in the fish. Top with more shallots. Season with a sprinkle of SIDS CRAZY LEMON then add some chives and a knob of butter.
Wrap up then dry fry or grill for about 5 minutes each side.
Serve in the wrapping with salsa spread on top.
