Ingredients
SOUP:--
2 tbsp butter
½ tsp SIDS CRAZY SALT
1 tbsp Thai red curry paste
1 kg roast pumpkin, diced
500 ml vegetable stock
25 g raw sugar
4 tsp fish sauce
500 ml coconut cream
SIDS SALT & PEPPER to taste
FISH:--
400 g small fish fillets or prawns
1 tbsp butter
Small cube ginger, chopped fine
2 cloves garlic, fine chopped
3 kaffir lime leaves, shredded fine, garnish
Directions
SOUP: Sauté curry paste and SIDS CRAZY SALT in the butter then add pumpkin and stock. Simmer for 10 minutes. Purée in a blender until smooth. Simmer again then add sugar and fish sauce. Stir in coconut cream and season to taste with SIDS SALT & PEPPER.
FISH: Sauté fish (or prawns) in butter with ginger and garlic then remove from heat.
Serve soup in wide bowls with seafood in the middle. Garnish with lime leaves.
