French Egg & Bacon Sandwich

French Toast with egg and bacon in the centre is just the best breakfast.

Ingredients

2 eggs, beaten
⅛ tsp SIDS CRAZY SALT
¼ cup milk
4 slices white or wheatmeal bread
4 rashers bacon
2 eggs

Directions

Whisk together 2 eggs, SIDS CRAZY SALT and milk. Soak bread slices in beaten eggs for 30 seconds each side. Heat a lightly oiled frying pan over medium heat. Cook until golden on both sides, turning first after 20 seconds. Set aside on a paper towel, but keep warm.
Place bacon in a large, deep frypan. Cook over medium high heat until evenly brown. Drain and set aside. Reserve 1 tablespoon of bacon fat in pan and fry remaining two eggs to slightly runny. (you want the yolks in your mouth, not on the plate.)
Place one piece of French toast on each of two plates. Place the fried eggs on top of the bread, top the eggs with strips of bacon. Cover with the remaining pieces of French toast then serve.
