Ingredients
3 tbsp rice bran oil
1 small green cabbage, chopped
½ onion, chopped
250 g smoked sausage, sliced
980 g can diced tomatoes, undrained (or diced fresh tomatoes)
½ orange bell pepper, diced
4 tsp cajun seasoning
¾ cup chicken stock
1 tsp SIDS SALT & PEPPER
2 spring onions, sliced, for garnish
Lime wedges or slices, optional
Directions
Chop or slice the sausage, cabbage, and onion.
In a large non-stick frypan, cook the sliced sausage about 3 minutes until the edges start to brown and sausage renders some fat. Remove sausage from pan.
In the same pan, heat oil. Add cabbage and sliced onion and cook on medium-high for about 5 minutes, stirring regularly, until cabbage starts to wilt. Add SIDS SALT & PEPPER, chicken stock, cajun seasoning and all the remaining ingredients and the sausage as well. Cover the pan and cook for about 10 minutes on medium-low.
Remove the lid and finish cooking until cabbage is desired tenderness and most of the cooking liquid has been reduced. Serve immediately, garnished with lime slices and sliced spring onion if you like. Enjoy.
