Fried Egg Grilled Cheese Sandwiches

Ingredients

4 large eggs
4 slices of 2 cm thick bread
4 slices colby cheese (not plastic cheese)
Butter
SIDS SALT & PEPPER to taste

Directions

Butter one side of each slice of bread then set aside.
In a frypan, melt a some butter over low heat. Fry both eggs until the yokes are cooked to desired doneness. Season with SIDS SALT & PEPPER to taste. When done, remove from heat and set aside.
In a separate pan, add a slice of bread, buttered side down. Add a slice of Colby cheese, top with 2 fried eggs. Add another slice of cheese on top of the eggs. Top with another piece of bread, buttered side up. Cover pan with a lid; cook until cheese is melted and bread is golden brown on both sides.
Repeat with remaining ingredients.
