Ginger Salmon with Red Cabbage Slaw

Ingredients

4x 120 g salmon fillets
3 tsp fine grated fresh ginger
2 tbsp maple or golden syrup
2 tbsp EV olive oil
1½ tbsp lemon juice
1 tsp SIDS CRAZY LEMON
2 cups shredded red cabbage
3 spring onions, thin sliced
1 carrot, fine strips
500 g kumera, peeled & chopped
¼ cup milk

Directions

Preheat oven to 200°C.
Place salmon in a small oven-proof dish. Drizzle with maple syrup and sprinkle with ginger and SIDS CRAZY LEMON. Bake in oven for 12-14 minutes until salmon is cooked.
Meanwhile, whisk oil and lemon juice in a large bowl until combined. Add cabbage, onions and carrot then toss gently to combine.
Serve salmon with slaw and mashed kumera.
