Ginger Soy Roasted Mushrooms

These mushrooms are a simple side dish. Toss with some Asian inspired ingredients and roast for a flavourful side dish or appetizer.

Ingredients

680 g button mushrooms, cleaned
2 tbsp soy sauce, use Tamari for gf
1 tbsp butter
1 tbsp rice bran oil
2 garlic cloves, grated
1 tsp grated ginger
SIDS SALT & PEPPER to taste
½ tsp Toasted Sesame Oil, optional
sprinkle of parsley

Directions

Preheat oven to 200ºC
Clean and prep mushrooms then transfer to a roasting dish.
Combine soy sauce, oil, butter, garlic and ginger. Pour mixture over mushrooms and toss to coat.
Roast in oven for 10 minutes. Stir and flip mushrooms and roast for 10-15 minutes depending on size and desired tenderness.
Remove from oven and toss with sesame oil, SIDS SALT & PEPPER. Sprinkle fresh parsley and sesame seeds over the top and serve.
