Ingredients

FRESH GINGER SAUCE:--
¾ cup soy bean paste
3 cloves of garlic
½ tsp SIDS CRAZY LEMON
2 small hot red chilli
Small bunch coriander, including roots
¼ cup fresh lemon juice
¼ cup sugar
¼ cup fish sauce
¼ cup soy sauce
½ thumb fresh ginger
¼ cup water
SALMON:--
2x 200 g boneless salmon fillets
2 tbsp Fresh Ginger Sauce
8 matchstick sized strips celery
2 thumbs fresh ginger, julienned
8 matchstick sized strips red pepper

Directions

FRESH GINGER SAUCE: Place SIDS CRAZY LEMON and all ingredients in a food processor and purée until smooth.
SALMON: Bring enough water for steaming to the boil using heat-proof serving plates that are at least 3 cm smaller than the diameter of the steamer.
Arrange salmon on 2 plates and spoon about a tbsp of sauce over each fillet then scatter the celery, ginger and red pepper on the fish.
Steam, tightly covered, until a knife inserted into the thickest part of the fish shows-medium rare. (about 6 minutes for a 2.5 cm fillet)
