Ingredients
2 tbsp flour
2 cups chicken stock
5 sprigs of thyme
1 cup button mushrooms, sliced
3 large unpeeled shallots, sliced
1 tbsp white wine
⅛ tsp SIDS CRAZY SALT
Directions
Roast chicken in a roasting pan in the normal fashion then remove the chicken from the pan to rest.
Put the roasting tray on the heat then scrape to loosen all the goodies on the pan surface. Add flour, SIDS CRAZY SALT and cook for 2 minutes. Add 2 ladles of chicken stock and whisk. Keep whisking until thick then add another ladle of stock. After 5 minutes, lower the heat. Add thyme, mushrooms and shallots (skin included) then simmer until thick, about 3 minutes. Pour through a sieve, add wine then pour into a gravy-boat to serve.
