Ingredients

500 g button mushrooms, fine sliced
2.5 kg beef fillet
50 g butter
100 g shallot, fine diced
1 tbsp garlic, minced
2 tbsp fresh thyme, fine diced
Pinch of cayenne pepper
⅓ cup brandy
2 cups cream
1 tbsp brown sugar
½ cup parsley, fine chopped
SIDS SALT & PEPPER to taste
Rice bran oil

Directions

Turn BBQ on 3 different heat settings (High, Medium & Low) Trim any visible silver skin from the fillet then cut in half. (for easy handling) Oil the fillet then season well with SIDS SALT & PEPPER. Sear on the hot section, turning every 15 seconds until golden all over. Finish cooking on the med/low areas then rest the beef for 10 minutes before slicing.
While the beef is cooking, heat a saucepan then add butter, shallots, garlic, thyme and cayenne. Cook for 5 minutes, stirring, then add mushrooms. Stir through and cook for 10 minutes then add brandy, followed by cream and brown sugar. Reduce heat to low and cook until slightly thickened.
To serve, slice the beef to preferred thickness then place on a warmed platter or warmed plates. Add parsley to the sauce, spoon over the meat and enjoy.
